Bun Baking Fun


Ham & Cheese Bun


Black Sesame Bun


Chocolate Twist, Coconut Twist & Muesli Bun


Attended a Bun Baking Class at the 17@Culinary, Damansara Height.
Here's the Recipe :-
Ingredients to make 23 buns

Mix A
Bread Flour - 200g
Yeast - 5g / 1 tsp
Sugar - 1 tbsp
Water - 120ml/gram

Mix B
Bread Flour - 150g
Yeast - 1 tsp
Salt - 1 tsp
Sugar - 60g
Egg - 1
Milk Powder - 2 tbsp
Butter - 40g
Water - 2 tbsp

Mix C
Chicken Ham
Cheese

1. Mix Part A and beat using Hook for about 3 minutes till soft dough formed.
Leave the dough in a big bowl. Covered for two hours in room temperature for slow proof.

2. After two hours, Mix soft dough from Step 1 into Part B and beat it for 6 minutes. Add about 2-3 tbsp of water IF the dough is too dry.

3. Add in butter and continue to beat for 3 minutes until dough is booth and elastic to touch.

4. Leave dough in a big bowl, covered with damp cloth for 20-30 minutes rest.

5. Punch the dough lightly to release some air.

6. Divide the dough into 40g and flatten them.

7. Place the chicken and ham into the dough and wrap.

8. Cover with damp cloth for 30 - 40 minutes.

9. Bake for 10-15 minutes at 150 - 170 deg C.

Note :
1. Salt to be added last in the Step 2, as salt will kill the yeast.'

2. Oil the bowl lightly for proofing, this is to prevent the dough from sticking to the bowl.

3. Punch the air out BUT lightly.

4. Can use the same recipe for others like Sardine, Tuna, Sausages etc etc....
