Digital Weighing Scale

Yeah, I bought this amazing weighing scale from City Baker. Hahaha... well, it is amazing to me because I was using ANALOGUE Scale all this while, until one day I thought why not buy a digital weighing scale. I thought anything to do with "DIGITAL" will cost me a bomb. Guess what? This simple Digital Weighing Scale cost me RM 39.90 and it saves me so much time preparing and measuring the right ingredient.

Love it so much!

A fulfilling non-working Saturday

Thanks to boss who declared Saturday a day off for all of us , so I could spend a good Saturday with my girls.

Our day started off by sending Jie Jie Chloe to Gymbo Class at 9.30am while Papa, Mama & Clarisse went Chawan to have breakfast. Even though we did not have satisfying meal, Baby Clarisse was happy enough to have her Roti Bakar Kosong. I regretted so much because I found there is a piece which is moldy. Argghhh~~!!  Ya, how can anyone serve moldy bread. Even though it was only a small spot, it is still not acceptable to serve moldy bread to your customer. Sorry... Can't stop complaining since I started on the moldy bread issue. The Roti Jala was no good, the Nasi Lemak's rice was SOGGY and it was COLD. *sigh* DELETE "Even though we did not ..... Roti Bakar Kosong" and I should replace it with "WE DID NOT HAVE A GOOD BREAKFAST AND BABY CLARISSE WAS SERVED WITH MOLDY BREAD." But I was quite sure the piece of bread that I gave Clarisse was fine, and she is fine NOW!

Even though it was a lousy breakfast, we were still very happy because we were able to spend a good time together during breakfast (minus the meal). Baby Clarisse was talking (babbling) a lot and she was very cheery which made our day!

After breakfast, Mama sent Baby Clarisse for Gymbo Class while PaPa shopped around. PaPa picked all of us up at 11.30am, and we left Gymbo for Grocery Shopping.

We arrived home on time for Chloe & Clarisse's Lunch. After lunch, Novi helped to clean them up and sent them for afternoon nap. While our girls were having their naps, Papa and Mama went for an hour gym session.

We returned home by 3pm, and took a clean shower. After shower, we played with our girls at their play zone. I told Chloe that I will bring her for a swim but we did not have much time to go to Desa, so Mama prepared the inflated little pool and let them have a short dip. They were having so much fun which I will try to post a video if I can (otherwise photos) in my next post.

:P Mama also managed to book for a facial appointment for Papa & Mama @ 6.30pm. While Clarisse and Chloe were having their dinner, Papa and Mama left home for facial.

It was even more fulfilling for PaPa because Papa ended his day with a FUN DRINKING SESSION with his buddy while Mama stayed home had my most precious moments with my two girls in our bedroom sleeping soundly and safely. :)

Sardine Bun & Raisin Sweet Dough Bread

MaMa prepared the dough and shaped the bun last night, and refrigerated it overnight. So that PaPa and family can have the freshly bake buns for breakfast this morning.

Sardine Bun.
PaPa complained, "I thought Homemade Buns supposed to have more fillings."
Hello, PaPa... It is not easy to wrap with so much fillings when you want a small bun! I tried to fill with more sardines at the beginning but then the dough broke apart and it broke further during proofing time. I need to learn a good dough technique FIRST, so that I can fill with more sardines next time. So, PaPa!! You better eat whatever I made as an encouragement so that I CAN BE BETTER day by day. :P Thank you "you" la.

This is not a proper loaf of bread. I used the sweet dough attempting to form into a loaf. As you can see, it is unsuccessful. The sardine buns are meant for adult because of the chili, so I took out a portion of the dough and mix it with Jumbo Size Raisin. Then, I slitted the middle of each dough, added in some butter and sprinkled tiny bits of sugar for my darling Chloe & my baby Clarisse for breakfast. MaMa also refrigerated the dough and baked it this morning. Everyone gets to eat freshly baked bun and bread. :P

The texture of the sweet dough bun is extremely soft. MaMa had a little problem of slicing it, the bread tears easily even though I was using serrated bread knife.

"Thank you MaMa make Chloe Raisin Bread" Chloe said, when she saw me packing two slices of the raisin bread into a bag for her. Sweet! Better enjoy the moment now when she doesn't know how to complain like PaPa. :P Can't imagines all my girls starting to complain "MaMa, Not enough fillings." "MaMa, Not Fresh!" "MaMa, the bun is too big" "MaMa, the bun is not nice" "MaMa, why so sweet?" etc etc etc... I know all these are coming very soon because my girls are growing very fast, and they are also learning very well from PaPa too :P Notii!!!!

MaMa's Birthday

Birthday Present and Birthday Card from Darling PaPa.

And He is "nice" enough to actually look for a newspaper to wrap the present. Better than no wrapper, I guess?? Anyway, MaMa had a shock to receive this special box of present fro PaPa. MaMa is still not recovered from the shock. :P It is such a rare occasion that I will receive a present from PaPa. He never sent me any gifts on valentines, anniversary or even my birthday. Can't blame me for being exaggerating how shocking I am to receive a gift. BUT, THANK YOU PAPA! I LOVE YOU PAPA. It is a very very very very precious gift!!! and I absolutely love it and I promise to use it daily to make it worthwhile. THANKYOU!!!!!

Overtime on my Birthday. Look at my hardworking colleagues trying to finish up the job quickly so that I can have dinner with hubby to celebrate my birthday. Indeed, GOOD JOB, GIRLSSS~~! Thanks for your help, and we managed to complete the job before 9pm and I get to have dinner with hubby at Kampachi, Pavilion. Hubby enjoyed the dinner so much!

Present Show Off Time

Coffee Cake from Colleagues. Yum Yum. I was rushing for closing so didn't take any photos of the cakes or my colleagues. :(  Had a swift birthday song sang by dear colleagues. And I didn't even cut the cake, immediately after blowing the candle and a word of "thankyou" then rushed back to work. Feel so bad, but everyone was rushing for closing today. *phew* luckily we managed it WELL. :P Took a picture of what was left from the piece of Yummy Coffee Cake.

Surprise bouquet! NOT FROM MY HUBBY! NOT FROM MY PARENTS! GUESS!!!!!

This beautiful bouquet is from my romantic parents-in-law. So Romantic and sweet, ain't they? I love RED ROSES and thanks Dad & Mom for sending me such a beautiful bouquet on my birthday and warm birthday wishes through birthday card and SMS. Thank you!!!!!

This thoughtful present is from my beloved sista. She knows that I am into baking so much  lately and she spent an hour to pick the best recipe for me. This is so thoughtful, she actually picked one with detailed step by step photo illustrations, so that I can learn to make the dough properly. :P Then, she will not have to suffer from eating HARD buns and loaf. LOL. I will try, bear with me. I will make these nicey loaves and buns very SOON!

Rocky Road from my beloved brotha. He picked this cake because he loves the marshmallows and the chocolates! So lovely. My brother started wishing me Happy Birthday one day before my birthday, and he went out to buy this cake for me. So Lovely!

My lovely sister and brother on my birthday with a special cake - ROCKY ROAD. SWEET! Yeah, my brother and sister are SWEET, so as the CAKE - SO SWEET! :P

Muscular Hubby asked me to place my face next to his arm to prove to me that his arm is bigger than my face. Kakakakak ..... Of course I refused. I don't want to suffer from his smelly....errr.....errrr.....armpit. Just kidding! :P

The most touching Birthday Present is from my darling Chloe. I was a little emotional towards the end of the day while I was still rushing for work. I called PaPa, almost wanted to tear when MaMa starts missing my two little angels at home. I told PaPa how I wished they can call me and wish me Happy Birthday. PaPa was so nice, he called home and told Novi to teach Chloe how to wish me Happy Birthday over the phone. On our journey to dinner, PaPa called home and asked for Chloe. Then, PaPa passed the phone to MaMa. The moment Chloe picked up the phone, she wished me "HAPPY BIRTHDAY, MAMA!" loudly. After a heart-melting wishing, Chloe sang me a Happy Birthday Song "Happy Birthday MaMa, Happy Birthday MaMa, Happy Birthday MaMa, Happy Birth....Day....Ma.....Ma..." I was so happy and hoped that I could be home at that instant and give my two little angels a great big hug with many many many kisses.

To conclude, I had a lovely and a very happy 32nd Birthday. Thank you all and I love you all!

Baby Clarisse & Chloe

I have been updating my Baking Projects so often and nothing about my princesses so far.

Today is the day that I should write something about them.

Let's talk about Baby Clarisse first.
*sigh* My poor little sweetie pie must be TOO SWEET, she got bitten by mosquitoeS again. I really hate these ruthless mosquitoes. They bit her FACE and her EYE LIDS all the times! All these bites become swollen and reddish after a while. Arghhh... MaMa couldn't sleep well. I kept on rubbing her swelling eye lids, cheeks and forehead, hoping that it will reduce the swell a little, which it did *just a little*. *sigh* This is the second severe face biting session of the month. It is not just A BITE, they always attack my Baby more than 4 - 6 bites, ON HER FACE!!!! It is such a pain for MaMa to see my daughter's blood sucked by these awful mosquitoes!!!!!! Anyway, I rubbed on her swelling parts for more than an hour last night, and this morning the first thing that I did when I opened my eyes was start applying the Calendula Cream and kept on rubbing on the swelling face. Still a little swollen and reddish.

When I got back to work today, the first thing that I did was to google how to get rid of the swelling by mosquitoes bite. There are actually some remedies recommended like using Banana Skin to rub on to the swelling part or apply baking soda mixed with water. I already told my maid to try, and I shall go home to have a look at the results.

Furthermore, tomorrow is Clarisse's 1st Birthday Party. I want to try to get rid/reduce the swelling and redness so badly!! I want my Clarisse to be the PRETTY BIRTHDAY GIRL. Sad!!

Other than the mosquitoes attacks. Baby Clarisse is growing really fast. She knows how to respond to our conversation, and she is learning more and more words. From her responses and reactions, it is very obvious that she understands what is going on around her. Good girl!

Walking part....errr...not yet. But she can move around herself by crawling or walking with support of the tables or stagnant heavy objects. She loves the walker. I know some said the walker will discourage her from walking, but she loves it. She moves herself around FAST with her walker, and she is able to reach her *destination* swiftly **ZOOOM**! It's ok. I am not sure how the walker will slow down her walking milestone, meanwhile I will just let her enjoy her *Ferrari*. Anyway, it won't be long. Once she knows how to walk on her own, She will never remember her "Ferrari" Walker (*Just like Chloe Jie Jie*).

Clarisse is eating more variety of food now. Yogurt, Pear, Apple, Grapes, Cherry, Cakes, Muffin, Buns, Fish Porridge etc etc... I admit I am a little slow in introducing new food to my babies, some can actually take rice at Clarisse's age. Hehe...It is ok, she will get to eat whatever she wants when she grows up. No hurry. I need to make sure if she is allergic to any food. So far, fish and eggs are fine so I guess she is fine with most food. Need to be a little more careful and patience. Plus, she has two TEETH so far, can't chew properly yet! I need to make sure her food is soft enough for her to eat.

Let's talk about Chloe.

Lately, Chloe always wet the bed in the nights. Almost twice a week for consecutively 3 weeks already. I didn't scold her. I just asked her what happened, why didn't she wake me up to bring her to the toilet. She always cried when she finds out that she wet her bed. Maybe she was trying to escape from my scolding so playing some acts to distract me. *shrug* What I need to do is to keep on telling her that she should wake MaMa up to bring Chloe to the toilet and not to wet the bed again. I hope by repeating my words can help. OR....ANY ADVISE! I really need it? I don't think I want to put her back to diapers.

Other than that, she has been a very good girl and cheery too. I think she really enjoys schooling, and she loves to talk to MaMa on what to bring to school for her Snack Time. This is my favourite part too. Hopefully, when Clarisse joins Chloe to school, she will be looking forwards to school and MaMa's Bento filled with LOVE! Kakakaka....I learned this words from some bloggers *SHIOK SENDIRI*!

Now, Papa's turn.

Papa put a little effort in bonding with our girls. Doubtless, my girls prefer Papa over Mama now! MaMa is always acting the Fierce MaMa and Papa, as always, acting the Loving and Understanding Papa. Why so unfair? How I wish I can be the Understanding one. Papa refused to take my role, and I have no choice to sacrifice myself to play the evil MaMa.

Time to go home now!

Should I continue to bake?

Yes, I admit that I am a little crazy over baking lately. I am baking almost every alternate day or whenever I get the chance. And I know that I am not good in it *YET*. There are many fail products. But, I thought practice makes perfect right? Unfortunately, I am lacking some supportive audiences. *Sigh*

I love to bake in the night when both my angels are asleep. Plus, if I bake at night, Chloe and my family can have the fresh buns or cakes in the next morning.

Papa : MaMa is stupid. Go outside and buy. They are cheaper and So much easier.

MaMa's Mum : Silly Girl....

Aunty : Wah, you Bake the "cake" in the night. ** It was a bun in a Bear Paper Cup, and she said it was a cake. I swear the texture of the bun is exactly like a bun! I just thought putting the bun in a paper cup makes it more interesting for Chloe**

MaMa's Brother : You can throw your cheesecake into the bin. *Yeah, something that I dun think I would eat. But my very kind maids at home actually help to clean up the Cheesecake. Luckily, Not Wasted!*

It can be very discouraging at times, but I don't think this is going to stop me from baking. I am sure one day, I will get a hand of it and bake good stuffs that everyone loves.

Chloe & Clarisse are always my supporters at all times.

Chloe : Thank you MaMa bake Chloe "Something" (*Cake, Muffin, Bun etc).
It is such a lovely statement she made everytime I present my effortful LOVE to her.

Clarisse never comment anything (*coz she doesn't know how YET!) but she always eats what I make HAPPILY.  (** Anyway, she is always happy when MaMa give her any food!* :P )

----------------------------------------------------------------------------------------------

Dear MaMa,

Gam Ba Teh!!! Don't be discouraged!

Love,
MaMa

Cheesecake

Yes, MaMa has been baking crazily. And Yes, I am addicted to BAKE~ (*even though it is not all the time nice!*)

This Peach Cheesecake is actually my second cheesecake of the week. Cheesecake is never been my favourite cake to bake because it tends to crack and sinks easily. Prior to this Peach Cheesecake, I actually baked Cherry Cheesecake, it was such a hit that I didn't have a chance to take a photo of it. Even my grandma loves it EXCEPT MY BROTHER, he said the cheesecake was too hard, and he preferred the soft cheesecake? *Huh? I don't really understand because Cheesecake is not my cup of tea, thus I can't really differentiate soft or hard texture.*

Anyway, My brother was craving for cheesecake and he purposely went to the supermarket bought back cream cheese, butter, digestive biscuits. So, I decided to bake it last night since my two lovely angels were both soundly asleep. Besides,it is a pleasure to bake.

I followed a different recipe from the Cherry Cheesecake because my brother said he wants a *soft* cheesecake. I reckon *soft* means I have to add in more creams i.e. whipping cream & sour cream and so I found this recipe with whipping cream & sour cream plus it is a easy 1 bowl batter, no hassle.

It looks quite nice, no cracks, the surface of the cheesecake remains flat even when it is cooled (yeah, it didn't sink!!). The cheesecake was already set when I took it out from the oven but still a little wobbly. I waited till it is cooled down and I touched the cake gently, it felt cook and set to me! Then I sent the cake to the refrigerator as the recipe said I have to refrigerate it OVERNIGHT.

This morning, the cake still standing firm just like the photos shown. I couldn't wait to taste it and I had a slice when I sent Chloe home from Vital Years.

Unfortunately, I didn't like the cheesecake. :( My iphone was in the car, and I didn't take down the photo of my slice of cheesecake. It was so soft. I didn't like it. It felt so creamy and creamy and creamy (*** sorry, didn't know how to describe and all i know it felt CREAMY!).

I don't think I am going for a second slice anymore. At least the previous cake, I had 2 1/2 slices of it. This one, I would say "NO".

The Cherry Cheesecake was nice and I love it. It wasn't sweet, the texture was not soft and I don't think it is hard either! No sour cream or whipping cream used. It had two tablespoon of cornflour which I think it was the cornflour which set the cheesecake firmly. I used 750grams Cream Cheese, 100grams Sugar, 2 TBSP Cornflour & 2 Eggs. Simply Bake it @ 160 Deg for 50 minutes.

This Peach Cheesecake used 750grams of Cream Cheese with 200ML SOUR CREAM & 180ML WHIPPING CREAM, 150grams of Sugar, 50ml of syrup, 4 eggs. Bake in Bain-Marie Style at 150 deg C for 45 minutes. The thought of it just make me feel Yeeeeeeeeewwwwww..... No more this sort of cheesecake!

I hope someone at home will accept this cheesecake, otherwise I am sure it will be sent to the bin. Oh No! I hate to WASTE, then I will have to gobble it up myself! :"(

Let's pray. Hopefully, this is the *softness* that my brother is talking about and he can clean the tray for me. Please Please Please.

Muffin in Pink Cup

On the way home from Vital Years, Chloe was flipping one my Steam Cake Recipes. Chloe stopped at the page with an Orange Cake in a Pink Cup. The color of the page including the cake itself is very girlish and princess-ish, so she really likes it.

Chloe : MaMa, Bake Chloe Pink Colour Cake to bring to School?

MaMa smiled and replied, "Sure. MaMa shall bake a Muffin in Pink Cup for Chloe to bring to school tomorrow."

Well, These Muffins are different from the recipe's Steam Orange Cupcake. But at least it is a Yummy Moist Muffin in PINK PAPER CUP. I added Chocolate Chips, Walnut & Raisin for these cupcakes.

MaMa sprinkled some Cheedar Cheese on top of the Muffin, and it's Yummy too.

These are Quick & Easy Muffin, and most importantly it is Yummy too.

- Mix All Wet Ingredients : 2 Large Eggs, 1 Cup of Milk/Cream, 1 1/2 tsp Vanilla Essence

- Mix All Dry Ingredient : 2 Cups of Flour, 1 TBSP baking powder, 2/3 Cup Brown Sugar, 1/2tsp Salt (Add in whatever  u want Walnut, Raisin, Cornflakes, Chocolate Chips, raspberries etc etc..)

- 125grams of Melted Butter & Cooled

Pour the Wet Mixture & Melted into the Dry Mixture alternately, and end with melted butter.

** Remember not to over mix. As long as the batter is combined, stop mixing.

Scoop batter into your paper cup and put in the oven @ 160deg C for 18 - 20 minutes (Original Recipe is 190 deg C but My oven is HOT * I don't know why* so I used 160 deg C)

And Yummy Muffin is Done!

The Muffin is really really nice, except the Chocolate Chips, it is too sweet. I added Hersey Chocolate Chips and all said that the Muffin will be better without these Chocolate chips and I was told to add in more Walnut next time.

The Cheedar Cheese Top is actually the hit because there is no Chocolate Chips and it is not SWEET. :P Papa L*OVE* (actually L*IKE* only) it.

Anyway, Chloe LOVE it. MaMa cannot resist her "WOW, I LIKE" & "THANK YOU MAMA MAKES CHLOE CAKE. I LOVE YOU MAMA."

My Mission for tonight is Sausage Bun :P So tough. I don't think I have enough time for the dough to proof and proof. Will think of alternative after work. :)

Meat Ball Bun - Pau

I "made an appointment" with my sister on Sunday Morning to make Pau. So, she said she wants to make Nikuman. My mum said my sister did this very well, and it is very Yummy ~ too. So, I thought before I explore into the very difficult project - Char Siew Pau, why not start with something that my sister did it before and I can learn from her. Nikuman means 肉子包 (simply Pork Bun in Japanese), and it consists of Dried Shrimps, Minced Pork & Dried Mushroom.

But due to the misunderstanding, my sister did not appeared in our appointment.  Kakaka....

Well, I proceeded with the other recipe and improvise a little with the prepared ingredients - dried shrimps, minced pork & dried mushroom. Guess what?

"How come you put salted fish in your Pau?" My dad asked

"Why make salted fish Pau? and not Char Siew Pau? " My Hubby asked

It is not so bad for my first Meat Pau. I just need to omit the dried shrimp for my next project or I can reduce the dried shrimps as my sister said she used like ONE TEASPOON for her pau and I used one hand's full. Hahahaha.....

Bento #7

Yesterday,

Chloe said, "MaMa, Make Hello Kitty Bread for Chloe to bring to School, ya?"
Mama replied, "How about Bear Sandwich?" Mama doesn't know how to make Hello Kitty Sandwich. I don't have the Hello Kitty Sandwich Mould.

Chloe said, "Hello Kitty biscuit?"
Mama replied, "How about the Bear Sandwich that Mama made for you last time. You said it was nice, right?" Mama was trying my luck to skip the Hello Kitty topic because I tried making a few times but it didn't turn out right.

Chloe said, "Hello Kitty Sandwich, ok?"
Mama said, "Bear Sandwich, ok?"
Chloe said, "Ok. Bear Sandwich."

Well, Chloe accepted my counteroffer. Haha....  Then, I thought why not give it another try. *sigh* Still so fail. I just couldn't find anything healthy food in Black to make the whiskers of the cat. What food is red which is healthy and go well with sandwich and allows me to make into the cat's bow/flower. Help!!! I am so NOT innovative. I need a step by step guide to help me complete my mission. *sigh*

I am a "supposed to be Hello Kitty"'s Hello Kitty with raisins and marshmallow.
Do I look like Hello Kitty? This MaMa a...Made me an ugly Hello Kitty.
Luckily, Chloe recognized me as a Hello Kitty Bread. Hahaha...

Chloe's Snack Box.

MaMa cut the bread & cheese using Hello Kitty Cutter. Then, MaMa used the Bow Cutter to cut the bread to form the bow and MaMa dyed the bow by squeezing the juice from a Fresh Cherry. Hello Kitty's eyes are made of cherry, nose & whiskers are made of Cheese.

Sweet Dough Bun Again ... Asian Style ...

This time I used another recipe for my Sweet Dough Bun and it turns out Soft, Fluffy and Yummy too. Everyone in the family loves it. These buns did not go into the bin, but into everyone's mouth. :P

Sausage Buns in pleats and Mini Sausage Buns in Roll topped with Black Sesame

Plain Sweet Buns, Egg washed and topped with Black Sesame

Tick Tock Tick Tock... 15 mins on 150 Deg C

Tick Tock Tick Tock ... 10 mins @ 150 Deg C

Nicely Brown

Mini Sausage Buns

Sausage Buns

My girls are enjoying their buns

Clarisse says : Finger Licking Good. MMMummm MMMummm...

Chloe says : Mama, Chloe's Sausage Bun. Can I have more please.

Ingredient :-
500 grams High Protein Flour
14g Instant Yeast
1 tsp Salt
75grams of Sugar
2 tsp Condensed Milk
1 Egg
50 grams Butter
50 grams Shortening
230ml Cold Water
** Hopefully, I didn't miss out anything, will double check again **

Procedures:-
1. Mix all the Dry Ingredient in a bowl. Flour, Yeast, Salt, Sugar
2. Add in the Condensed Milk & Egg. Mix Well with hand
3. Add in Butter & Shortening. Mix Well with hand
4. Place the mixed ingredient in the Standing Mixer, with hook attachment slowly add in the water and knead at low speed for 1 minutes
5. Continue to knead at medium speed for 10 minutes
6. Let it proof for 30 mins
7. After 30 minutes, Stretch the dough and fold over and let it proof for 15 - 20 minutes
8. Then, Stretch the dough again and fold over and let it proof for another 5 - 10 minutes
9. Divide dough in your desire size and form them into a ball. I used 30 grams for the small sausage bun and 60grams for the bigger bun.
10. Rolled these doughs flat and fold them over and let it proof for 5 mins
11. Shape the dough according to your liking, pleats, rolls, balls etc etc.
12. let it proof for 30 minutes
13. Egg wash them
14. Place into the Preheat Oven for 10 - 15 mins @ 150 Deg C, since it is short baking time, just watch it. As long as it turns brownish, you can take it out from the oven to cool.

These buns turn out quite good. I quickly tasted it while it is hot, and the texture was soft and fluffy. Unexpectedly, they are all still very soft when they are already cool, and taste even better when it is cool.

Love it. Will definitely use this recipe for other fillings like Tuna, Sardine etc...

The whole process took me 3 hours. From measuring ingredient to mixing the ingredient. From waiting for 1st proof till the last proof. From shaping the dough to the final touch of egg wash. Lastly baking. It is not difficult, the tougher part to me is shaping them. Most of the times are waiting for these dough to proof. Great work & Great result.

Fairy Chloe

Chloe requested MaMa to take pictures of her and transform her into fairy.
